Xiao Long Bao Specialists
Bamboo Basket’s signature dish is Xiao Long Bao 小笼包. These delicate soup-filled dumplings are Shanghai’s most famous cuisine. Skilfully prepared, they are a carefully constructed miracle. They are made with seemingly delicate, semi-transparent dumpling skins, wrapped and neatly pleated around an aromatic filling of pork and a mouthful of hot savoury soup broth. The fillings, usually pork, are traditionally seasoned with a little ginger and shaoxing wine, and mixed with pork stock that melts on cooking, transforming into a delicious soup. The addition of crab meat and crab roe makes for a rich but equally traditional Xiao Long Bao.
